Chef Carol’s Favorite Tortilla Soup

Serves 10 as a first course

ingredients

  • 1/4 large white onion, about 1 cup, chopped
  • 2 cloves garlic, peeled
  • 1 tbsp. extra-virgin olive oil
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp. Simple Indulgence™ Southwest Chipotle Seasoning Blend
  • 1 cup canned tomato purée
  • 2 qt./1.9L chicken stock
  • 2 dried bay leaves
  • 12 corn tortillas

garnish

  • 1/4 cup shredded cheddar cheese
  • reserved toasted tortilla strips
  • 1 Haas avocado, diced
  • 4 Limes, quartered
directions
  1. Preheat oven to 350ºF/175ºC. Cut tortillas in 1/2″ strips and place on a Silicone Wonder™ Mat.  Lightly toast in the oven until crisp, about 10 minutes.  Set aside 1 cup of the toasted tortillas for garnish and crush remaining tortillas.
  2. Place onion and garlic in the base of the Chop ’N Prep™ Chef. Replace cover,pull cord 10–15 times until finely chopped.
  3. In a Chef Series™ 6 Qt./5.67 L Dutch Oven, heat the oil over medium heat.
  4. Add the onions and garlic and sauté until translucent, about 2–3 minutes.
  5. Add the stock and bay leaves. Reduce heat to medium and simmer about 15 minutes.
  6. Carefully add the soup to a blender and blend on high until completely processed and smooth.
  7. Pour into bowls for serving. Garnish with reserved tortillas, cheddar cheese and avocado.

Optional: Cooked, shredded chicken may also be added to the soup to make a hearty main dish.

Make this DELICIOUS treat from scratch in the microwave with Tupperware!

Serves 8

Brownies

  • 2 eggs
  • 1 cup granulated sugar
  • ½ tsp. salt
  • 1 tsp. vanilla extract
  • ½ cup butter, melted
  • ¾ cup all-purpose flour, sifted
  • ½ cup cocoa powder
  • 1 cup pecan halves
  • ½ cup semi-sweet chocolate chips

Irish Whipped Cream

  • 1 cup heavy whipping cream
  • 2 tbsp. Irish Cream liqueur, such as Baileys® Irish Cream

Let’s bake!

  1. In the Thatsa® Bowl mix eggs, sugar, salt and vanilla extract.
  2. In the Micro Pitcher, melt butter (about 1 minute) and combine with sugar mixture.
  3. Add flour, cocoa, pecans, and chocolate chips and mix with Saucy Silicone Spatula until well combined.
  4. Pour batter into TupperWave® Stack Cooker 3-Qt Casserole and place Cover on top. Microwave on high for 5 minutes or until a toothpick inserted into the center comes out clean.
  5. In the Whip ’N Prep™ Chef, mix heavy whipping cream with the Irish Cream liqueur and whip until soft peaks form.
  6. Turn the brownies out onto a serving plate and cut them into even pieces, place on aMicrowave Luncheon Plate and top each brownie with whipped cream topping. Sprinkle with cocoa powder to garnish, if desired.

If you’re like me, the croutons are the BEST part of a salad!  Yummm.   This is an easy recipe for delicious homemade microwave croutons. 

Microwave Croutons

Ingredients:

  • 5 cups bread crumbs
  • ½ stick butter
  • 1 tbs. crouton seasoning**
  • 3 tbs. Parmesan cheese

Crouton seasoning:

3 tbs. garlic salt, 7 tsp. garlic powder, 7 tsp. onion powder, 2 tsp. basil, 2 tsp. oregano, 1 tsp. thyme, 1 tsp. marjoram, 1 tsp. white pepper.  Put all spices into a Large Spice Shaker, seal & shake to combine.  Makes enough for 10 batches of croutons

Directions: 

Place bread crumbs in Large Deep Vent ‘N Serve and microwave on high for 2 minutes. Melt butter in 1 cup Micro Pitcher on medium for about 1 minute.  Stir in seasoning and stir into bread crumb mix and microwave on high for 3-4 min, stirring once.  They should be crisp and almost dry (bread cubes will crisp as they cool).  Store in a Modular Mate container to keep fresh.

Yesterday, Tupperware held an event in New York with Peter Facinelli (from Twilight and Nurse Jackie), and Reggie Bush (player for the New Orleans Saints) showing that Tupperware is sexy!   The event highlighted a recent Harris Survey which found that 63% of women find it sexy when a man cooks, whereas only 33% find it sexy when their partner pays for dinner.

This delicious recipe serves 4 people, and is SO EASY!   It takes less than 20 minutes, and is done totally in the microwave!

Ingredients:

  • 8 slices of white bread
  • 3 large eggs
  • 1 1/2 cups milk
  • 1/3 cup maple syrup
  • 1 tsp. Tupperware Simple Indulgence Cinnamon-Vanilla Seasoning Blend
  • pinch of salt
  • 1/2 cup blueberries

Directions:

Slice bread diagonally into large triangles and set aside.  Crack eggs into the TupperWave Stack Cooker 3-qt. Casserole.  Add milk, syrup, Cinnamon-Vanilla Seasoning Blend, and salt.  Whisk together until combined.  Fold in blueberries.  Add the slices of bread and press the bread down into the liquid with your fingers.  Make sure all of the bread has been submerged in the custard before proceeding.

Place cover over Casserole and microwave at 50% power for 12 minutes, or until the casserole has risen.  Let rest for 5 minutes.  Serve with additional maple syrup and sprinkled with powdered sugar.

This smoothie recipe is delicious and nutritious!!   Blueberries are one of the highest antioxidant fruit, helping to keep cells healthy and fight off heart disease and improve memory.  

Blueberry Banana Smoothie

Ingredients:

  • 1/2 cup fresh blueberries
  • 1 small banana
  • 5 oz. light vanilla yogurt
  • 1/4 tsp. vanilla extract (optional)
  • 5 ice cubes

Place all ingredients into a blender and blend well.  Pour into a Tupperware tumbler and enjoy.  Makes 12 ounces.
